Easy Five Can Chili

What do you need:

  • 1 can of black beans, drained
  • 1 can of red beans, drained
  • 1 can of chipotle peppers in adobo sauce
  • 1 can of diced tomatoes
  • 1 can of beer, preferably lager
  • 1 medium onion, chopped
  • 1 tablespoon of olive oil
  • 2 tablespoons of sea salt
  • 1 teaspoon cumin
  • 1 teaspoon of garlic powder
  • Your choice of toppings (cheese, onion or avocado)

Remove the peppers from the can, reserving the adobo sauce. Remove seeds and ribs before slicing.

Heat the olive oil in a large dutch oven over a campfire. Cook the onion until soft, then add the black beans, beans, chopped peppers, adobo sauce, tomatoes (with juices), beer, sea salt, cumin and garlic powder. Stir to combine the ingredients well.

Cook until chili thickens, about 20 minutes. Remove from heat, add topping of your choice and serve!

Delicious vegetable chili

What do you need:

  • 1 can of black beans, drained and rinsed
  • 1 can of beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 large can of roasted tomatoes
  • 2 carrots, peeled and finely chopped
  • 1 red pepper, chopped
  • 1 onion, minced
  • 3 cloves of garlic, minced
  • 1 jalapeño, finely chopped
  • 3 cups of vegetable broth
  • 3 tablespoons chili powder
  • 1 tablespoon of olive oil
  • 1 tablespoon of tomato puree
  • 1 tablespoon cumin
  • Salt and ground pepper to taste

Over hot coals on a campfire, heat the olive oil in a large pot. Sauté carrots, bell pepper, and onion until softened, about 5 minutes. Stir in the garlic and jalapeños and cook for 1 minute more. Pour in the tomato puree, then add the black beans, broad beans, broad beans, tomatoes and vegetable stock. Season with cayenne pepper, cumin, salt and pepper.

Bring to a boil, then reduce heat. Let it simmer for 20-30 minutes. Serve immediately.
